low-fat wholewheat oat apricot muffins

30 Aug

yesterday i was grabbed by the urge to bake something.  i was also craving apricots for the longest time. so i put the two together. 2 birds one stone thing, you know?

i scoured my fridge for possible ingredients (i like to freestyle when i cook or bake, twist some recipes and personalize them), and found i still had some buttermilk, from when i made red velvet cupcakes for a friend’s birthday party.
so i googled “wholewheat buttermilk apricot muffins”, and was overwhelmed by the sheer amount of recipes and combinations out there. i opened the first 15, and decided to come up with my own.

now, i haven’t tried them yet (i forgot them at home- brain wasn’t awake yet), but i gave a few to my friends who were travelling today, and they told me the muffins were delicious!
i tweaked the recipes i found by using wholewheat and oats instead of regular “white” flour, and brown sugar instead of white. i also added a couple of spoons of apricot jam to the batter, to intensify the flavor.

– 1 cup chopped dried apricots                                        – 1/4 cup melted light butter
– 1 cup boiling water                                                             – 1/4 cup vegetable oil
– 1,5 cups wholewheat flour                                              – 1 cup buttermilk
– 1/2 cup oats                                                                          – 1 egg
– 3/4 cup brown sugar                                                         – 2 tbsp apricot jam
– 1 tsp baking soda
– 1/2 packet vanilla sugar (1,5 tsp)
– dash of salt

– preheat the oven to 190°C (about 400°F) and line muffin tray with paper cups.
– chop apricots and place in a bowl. pour the boiling water on them and let stand for 5 minutes.
– in a medium bowl, stir together the flour, oats, sugar, salt, baking soda and vanilla sugar.
– in a separate bowl mix the butter, oil, buttermilk and egg.
– slowly add the wet bowl to the dry ingredients, but dont overstir. add the jam and keep stirring.
– drain the apricots and add to the batter, make sure that they are evenly spread.
– fill the muffin cups and bake for about 17-20 minutes. test with a toothpick, if it comes out clean, they’re done.
– cool the muffins before removing them from the tray.

healthy, low-fat fruity muffins- enjoy!

candy on your body

26 Feb

today we swapped our fortnightly brunch session with lunch at ramien, this awesome asian noodle restaurant in the 6th district. after that, we went for dessert at café pierre, a cute french bistro, where we had lemon tarts, crèpes and coffee- trés jolie! even though we were full, we were still craving bubble tea, so we strolled towards the first district enjoying the sunshine. we went to baburu at schottentor, where they serve the deliciously addictive concoction. the first thing i noticed when we got in was that the girl at the cash register was wearing awesome play station controller earrings!

ps controllers, lollipops, cupcakes

i was blown away, they are so cool! what amazed me even more is that she did them herself, and she did all the ones that were on exhibit at the store! such cute and detailed earrings, rings and necklace charms! lollipops, donuts, cupcakes, gingerbread hearts, sushi, onigiri, stuffed biscuit hearts- i don’t think she missed anything, there was even a pizza slice necklace charm! crazy!

oreo necklace charm, biscuit hearts, cupcakes, donuts

stuffed biscuit rings, waffle heart earrings, onigiri earrings

unfortunately i didn’t take pictures of the magnets, key/phone chains and other figurines (of which the cute pizza charm) that weren’t on the main display- the place was crowded, but i’ll take some more when i go again :)

7 Feb

I’m sorry I’m a bit m.i.a. at the moment… My parents are visiting, I’m in a loop of back to back job interviews and assessment centers (which really suck btw, I was there 6 hours, and it so wasn’t worth it), and can’t seem to find time to write.
But I’ll be free enough very soon :)
Here is a picture of my signature cocoa-raspberry-white chocolate chips muffins. I made them on friday, they were delicious!

tattoo brainstorm

2 Feb

i’ve wanted to get another tattoo for a while now, and i think i even finally settled for one… see, i love animals, i used to have a horse a few years ago (i had to sell him when i moved to vienna), and i have the 3 sweetest, cutest and funniest cats in the world! so what better suited design is there, than to ink a cat? i searched the internet extensively, and my favorite cat- design is this one:

it’s elegant, sleek, feminine, pretty- and i think it would fit perfectly on my ribcage :)

i was also thinking of maybe getting a cute, funky tattoo, like these cupcake or chubby unicorn ones: but then again, do i really want an obese pony with a horn, or a multicolored novelty cake somewhere on my body? no, i do not. if i’m already going to permanently draw on my skin, i’d better make sure it’s something that i can live with for the rest of my life.

it’s funny how some people don’t seem to realise the importance a well chosen design has! there are several websites that ridicule the poor decisions people make about tattoos; my favorite is the one of the cheezburger network, under the FAIL category, Ugliest Tattoos. it’s hilarious, and the moderator comments every single entry, and it has me laughing out loud every time!
what surprises me though, is that even celebrities make crucial mistakes like spelling when they get writing tattooed. a good example is Hayden Panettiere:
her tat says: vivere senza rimipianti, which is italian, and means to live without regrets. that’s awesome and all, but it should actually read: vivere senza rimpianti. no extra “i“! such a shame, because not only is her back now ruined with a botched tattoo, no, it also makes her look silly and uncultured. i shouldn’t rant about it, it might not even be her fault, maybe the tattoo artist messed up, but usually before you get inked, they stencil you first, to check that everything is like you wanted… i guess we’ll never know :)

i don’t know yet when i’ll be getting my cat tattooed, but i hope it will be before summertime, so i can show it off :P
